BIO:

William J. Farzley II, C.C.C., C.C.E

Chef Farzley has been carving ice for the last 23 years.
It all began as one of his many responsibilities as a chef in some of the best restaurants and hotels in the country from Rhode Island, New York, New Jersey, Arkansas, Tennessee, Puerto Rico and now Georgia.

As time progressed, his passion and success in culinary arts and ice carving developed. His unique ability to create spectacular works of art limited only by his imagination, has added magnificent center pieces for many prestigious establishments where the main focus was dinning room décor, i.e. The Grand Hotel in Atlanta, GA the Peabody Hotel in Memphis, TN and many others including the Palmas Del Mar Resort in Puerto Rico. Some of his recent work includes logos for the United Way of Atlanta, March of Dimes, Fox 5 News, and V103 Radio.

Today Chef Farzley is a culinary arts instructor at the Art Institute of Atlanta and Gwinnett Technical College. He is responsible for training in all areas of cold food preparations, showpieces, buffet displays, food salon competitions, and ice carving for the next generation of chefs.

Q and A.: 

Q: How long will the ice carving last?
A: 5-7 hours depending on the room temperature, or 1⁄4 inch an hour.

Q: How far in advance do I need to order an ice piece?
A: 2-3 weeks

Q: Can you freeze objects in the ice?
A: Yes, I can suspend logos, flowers, fruit and any type of plastic to enhance the display.

Q: What type of ice do you use?
A: We use a seamless block using the Cline Bell System which is perfectly clear
without a core feather.

Q: Can you color the ice?
A: Yes, we can, although it is quite costly and as it melts it loses the color quite fast.

Q: Do you teach classes or perform public demonstrations?
A: Yes and this is typically done in the slower time of the business year.
